This July, Allora opens its kitchen to Chef Kwan Soo — Executive Chef of InterContinental Hanoi Landmark 72 and a Korean-Canadian culinary voice shaped by three decades across the world's great dining rooms. For four days, Korean cooking finds its place at an Italian table: studied, personal, and entirely his own. 

Each day brings a different format — bar snacks to ease you in, a han-sang set lunch served by tray, an outdoor street food buffet on Friday evening, a Saturday dinner buffet, and a Sunday fusion brunch where both kitchens finally meet. Come for one chapter, or come back for all of them.

Han-sang is the Korean tradition of presenting a full meal at once — one main, one soup or stew, rice, and a spread of banchan side dishes arranged on a single tray. Each set comes with "Sung Nyung" (숭늉) at the end of the meal, a scorched rice tea enjoyed as a post-meal palate cleanser or digestive aid.

Friday evening moves outside. Modelled on the energy of a Korean street market, the buffet is informal and built for grazing. Savoury highlights include Kimbap, Ddeokbokki, Odeng, Bindaeddeok (Mung Bean Pancake), Dakgangjeong (Crispy Chicken with Sweet and Sour Sauce), and Kongguksu — a chilled Somyeon Noodle Soup in cold Soy Milk broth. Sweet offerings include Dalgona, Bingsu, Hoddeok, and Bungeoppang.

The weekend's centrepiece — the same generous spread, two different moods. Chef Kenny's Korean dishes sit alongside Allora's own signatures and crowd favourites, making this as much a celebration of the restaurant as it is of the residency. On the Korean side: start your meal with Korean-style Salads, Pickles and Kimchi, before you dive into the spread of Korean BBQ station for LA Galbi, Jangeo (Eel) and ChunCheon Dak Galbi and a hot food selection with Assorted Korean Pancakes and Dumplings, slow-braised Andong Jjimdak, Jeonbok Jjim (steamed Abalone), Samchi Jorim (Spanish Mackerel Stew), Ori Jumureok (Stir-fried Marinated Duck) and more. In the spirit of collaboration, both kitchens collide to create Gochujang Ragu Rigatoni, Kimchi Carbonara, Perilla Oil Buckwheat Noodle Pasta and Pizzas topped with Bulgogi and Kimchi. Desserts to complete the meal include Hotteok, the ever refreshing Bingsu, and traditional Injeolmi and Bungeoppang. All these will be served alongside a selection of Allora's Italian classics.

A Korean-Canadian chef with more than 30 years of international culinary experience, Chef Kenny leads the culinary programme across five restaurants and bars in Hanoi. His cooking philosophy centres on balance, precision, and the story a dish can tell — rooted in Korean heritage, shaped by a career spent in the world's great dining rooms.
